Bianchetto, or the whitish truffle, is the springy version of the white truffle; albeit less pungent and more garlicky, smaller in size and darker in colour, and a tenth as expensive.  

Species: Tuber Borchii Vittadini

Origin: Le Marche, Italy  

Availability: Mid – winter to spring  

Application: Pronounced garlic aroma, must be used with care in the kitchen. Versatile use with a strong flavour and aroma, and can accompany any dish with a sauce.
